Gargantuan grand strategy games like Stellaris have an expansion problem. Long term players want new levers to pull, but it's also a chance to tempt fresh meat into the fold.

Hm, I had no such problems in MP....Compared to what I experiecned in Civ 5 and Civ 6 Stellaris may run flawless (technically speaking for MP issues only)I recently started playing Stellaris myself, and while awesome, it does have some pretty glaring flaws. Things like the ridiculously shallow combat system, limited race creation, and slightly unclear options put a serious dent on my overall enjoyment.
I also discovered that there is no proper ping function implemented on multiplayer, and the one there is constantly bugs out and keep the ping eternal throughout the whole dozens-of-hours campaign. Such basic features being bad or missing reflects quite poorly on the overall game.
Sorry for the delay answering this.And to your point of limited race creation...how do you think it is limited? The options regarding goverment, traits, ethics, civics etc are staggering.......so what part do you have a problem with, just curious....
