I've gotta second the Fairway Solitaire. It seemed like one of the first games like this (at least since the old Solitare Journey) to give you a fun context in which to play solitaire. You don't need that context, but it sure does make the game more enjoyable.

Politaire is a true Egg of Columbus. Ppl had played Solitaire for ages without realizing poker actually worked great solo!

Not on iOS, but last year's 3DS title, Pocket Card Jockey, was the most unique twist on solitaire I've ever seen. http://www.nintendo.com/games/detail/po ... jockey-3ds That thing is truly bizarre.

Pazaak. This is like Blackjack, except you can add/subtract to your score instead of just add. Since it's a minigame part of KOTOR, you can also collect cards that can give you an edge.

I like the physical card game called "Parlay". It combines poker and word play. You are dealt a hand of regular playing cards, that have letters and point values added to them. You have to make a word using your cards, but also keep in mind that you are trying to form the best poker hand as well. You have to decide whether to fold, and get the points from the word you formed, or risk it all to get big bonus points if you win the poker hand.
